Need POI for Sanya and halongbay.

my family and i will be going for a cruise to Sanya and Halong bay. we didnt want to take their shore excursion and decided to wander off ourselves instead.
Did some research on sanya but not much popped out. i have around 8 hours on shore so i'm opened to any places of interests from the members here who have been there.
Also on the list is halong bay. i decided to take the boat tour that goes to some islets and lunch is provided but the tour is only 3 hours and includes some cave visits. Anything on shore that i should not miss out on ?
